You can catch from 3 to 6 pieces of them and they bite best if you use live bait. You can buy bait at the Loreto harbor, price 10 for 15, 15 for 20, 20 for 25, etc or you have the option to catch your own. Another good place to fish for Yellowtail is at Puerto La Lancha on the north side of Carmen Island; you can catch good number of them, there are very big schools of Yellowtail boiling the water on the surface (see photo).
